Thornfalcon Winery & Press runs a vineyard and a cider press side by side, on a 250-year-old, Grade II listed farm in Somerset. It moved onto the site in 2023, planting the classic sparkling varieties of Chardonnay, Pinot Noir and Meunier that year, with a second plot of disease-resistant hybrid varieties added in 2024. Its own grapes are not expected to be ready until 2026, so the sparkling wine sold today is made from a 2019 blend sourced from other Somerset vineyards growing the same varieties and terroir.
